A split coil humbucker would give you both single coil and humbucking sounds. And if you wired in another switch you get both series and parallel as well. I have seen double pickup lapsteels also which would give you even more tonal choices, but personally I find that a bit of overkill. As to the tuners, I'm sure a slotted headstock is fine. I would use tuners designed for slotted steel string instruments, like the ones sold by Grover or Waverly.
