Got this 50's Hofner archtop in which needs a neck reset. Anyone with previous experience have tips?

Take off the heel cap, drill a couple of small holes for you steam needle, and steam it off :)

I have done a lot of these Hofner guitars and basses they are not that difficult to get the neck off :). The only problem is the glue joint between the neck and the heel, most of the old Hofner necks, are made by gluing two pieces of wood together, the neck "blank" and the "heel", that glue joint is prone to failure :) So sometimes you will need to get the neck off in pieces :)     

I removed the heel cap and there is a big old screw there that seems to be trying to to keep that joint together! Is there an accepted solution to that problem? As it seems like it's been designed to fail!

A big old dowel or two is the way to go :) Screws just pull things together they don't add strength :)
